Pumpkin Pie Tofu Pudding
2 servings1 cup cooked pumpkin (or pumpkin purée)1/2 block silken tofu4-5 dates1 ripe banana1/2 tsp cinnamon or pumpkin pie spice1. Combine all ingredients in a blender & blend until smooth and creamy.2. Allow to set in the fridge for 30 minutes before serving.3. Use your favorite toppings!
